Chili Weather


I don’t know about you, but the change in seasons affects my appetite. During warmer months, I prefer cooler and lighter foods. With a chill in the morning air this week, I’m thinking it’s time for warm and hearty meals—like chili. My recipe adds browned ground beef and kidney beans to tomatoes and green chiles, stirs in my favorite spice mixture, and simmers the concoction for at least three hours. The results taste fantastic, especially sprinkled with sharp cheddar cheese and corn chips. Leftovers taste even better and freeze well for later meals.
